A surprisingly easy cheesecake recipe, considering how delicious it is!

Ingredients
Crust
- 1 cup graham cracker crumbs
- ¼ cup butter or oleo (melted)
Filling
- 24 oz cream cheese (softened)
- 1¼ cup brown sugar
- 3 eggs
- 1 cup pecans (chopped)
- 2 tablespoons flour
- 1½ teaspoon vanilla
Topping
- ½ cup brown sugar
- ¼ cup Butter or oleo
- ½ cup pecans (halves or chopped)
Instructions
Crust
- Mix crumbs and melted butter/oleo.
- Press evenly in bottom of 9-inch spring-form pan.
- Filling
- Blend cream cheese and brown sugar until smooth.
- Add eggs, one at a time, mixing well after each.
- Stir in pecans, flour, and vanilla.
- Bake at 350° for 50-55 minutes or until set.
- Cool to room temperature; cover and chill.
Topping
- Stir brown sugar and butter/oleo over low heat for 3-5 minutes, depending on how firm you want topping.
- Pour hot topping over chilled cake.
- Garnish with pecan halves or sprinkle with chopped pecans, as desired.
Note: If you don’t have a spring-form pan, you can use a large regular pie pan, or you could divide the filling into a couple of ready-made graham cracker or cookie crusts.
