A surprisingly easy cheesecake recipe, considering how delicious it is!

Ingredients
Crust
  • 1 cup graham cracker crumbs
  • ¼ cup butter or oleo (melted)
Filling
  • 24 oz cream cheese (softened)
  • 1¼ cup brown sugar
  • 3 eggs
  • 1 cup pecans (chopped)
  • 2 tablespoons flour
  • 1½ teaspoon vanilla
Topping
  • ½ cup brown sugar
  • ¼ cup Butter or oleo
  • ½ cup pecans (halves or chopped)
Instructions
Crust
  1. Mix crumbs and melted butter/oleo.
  2. Press evenly in bottom of 9-inch spring-form pan.
  3. Filling
  4. Blend cream cheese and brown sugar until smooth.
  5. Add eggs, one at a time, mixing well after each.
  6. Stir in pecans, flour, and vanilla.
  7. Bake at 350° for 50-55 minutes or until set.
  8. Cool to room temperature; cover and chill.
Topping
  1. Stir brown sugar and butter/oleo over low heat for 3-5 minutes, depending on how firm you want topping.
  2. Pour hot topping over chilled cake.
  3. Garnish with pecan halves or sprinkle with chopped pecans, as desired.
Note: If you don’t have a spring-form pan, you can use a large regular pie pan, or you could divide the filling into a couple of ready-made graham cracker or cookie crusts.
